SECTION II: INTRODUCTION TO THE COURSE

Course Objectives & Content

Course Objectives: By explaining the intricacies of mass food production to students, it is to ensure that they gain important points and information about what they will encounter when they work in such places.
Course Content: Catering is the art of providing food service to a large number of people. When the definitions in Turkish and foreign sources are carefully examined, it is understood that "catering" services mean the direct or indirect distribution and service of food when it is necessary to produce it. As a result of these definitions, it is possible to evaluate the concept of "catering" as "food service". "Catering" businesses are businesses that provide customers' requests and needs where, when and under the conditions they want, and serve them when necessary, with well-equipped kitchens and equipment.

Course Specific Rules

As the Course Requirements, students are expected to participate in classes, actively participate in class discussions and evaluations, complete their homework within the given time and check their e-mails daily through OIS.

Course Learning Outcomes (CLOs) are those describing the knowledge, skills and competencies that students are expected to achieve upon successful completion of the course. In this context, Course Learning Outcomes defined for this course unit are as follows:

  1) Will be able to explain the functions of catering organizations regarding management and planning.
  2) Will be able to define basic concepts related to Mass Nutrition System and Catering applications.
  3) Will be able to make menu planning and costing applications in catering operations, and analyze service and presentation techniques. Skills
Skills (Describe as Cognitive and/or Practical Skills.)
  1) Will be able to define the functions related to management and plan of catering organizations.
  2) Will be able to compare the catering operations inside and outside and discuss the importance of teamwork in catering organizations.
  3) Will be able to define different service types in catering organizations and explain production process and control.
  4) Will be able to evaluate the theoretical and practical knowledge specific to the field.
