SECTION II: INTRODUCTION TO THE COURSE

Course Objectives & Content

Course Objectives: To explain the theoretical and practical information about Turkish Cuisine, to define the principles of Turkish Cuisine and cooking techniques, to evaluate the similarities and differences of Turkish cuisine history, table manners, portion size, serving styles in terms of palace and folk cuisine from the past to the present.
Course Content: Seasonal characteristics of food and foods, preserving the product selected according to the season (pickle, jam, bacon), choosing and flavoring and processing the cooking technique according to seasonal characteristics, choosing which cooking technique according to different food groups (meat, milk, eggs, pulses, cereals) It includes the steps of choosing what should be applied and applying the techniques required by firing techniques.

Course Specific Rules

As the Course Requirements, students are expected to attend classes, actively participate in class discussions and evaluations, complete applications within the given time, and check their e-mails daily through OIS.

  1) Can apply the cooking method according to the processing and seasonal characteristics of the product.
  2) Gains the ability to make sense of Turkish cuisine recipe styles and diversity.
