SECTION II: INTRODUCTION TO THE COURSE

Course Objectives & Content

Course Objectives: The process of creating a menu is called menu planning. When used as a control mechanism, the menu; It is a communication tool that helps the business stay efficient, functional and profitable and explains the ingredients of each dish to the customer. Within the scope of this course, it is aimed to provide students with information on what the menu is, how it is divided into parts, how it is created, and how menu planning and cost calculations are made.
Course Content: Factors Defining the Menu, Nutrition and Menu Planning, Menu Styles, Standardized Recipes and Recipe Costing, Menu Pricing, Menu Engineering

Course Learning Outcomes (CLOs)

Course Learning Outcomes (CLOs) are those describing the knowledge, skills and competencies that students are expected to achieve upon successful completion of the course. In this context, Course Learning Outcomes defined for this course unit are as follows:
Knowledge (Described as Theoritical and/or Factual Knowledge.)
  1) Explain the principles and principles of menu and menu planning.
  2) Calculates the menu cost and creates the sales price of the prepared menu.
  3) Prepare a menu card.
  4) Distinguish between various diets and planning the menu.
  5) While preparing the menus, he/she distinguishes the information that will ensure the menus to be healthy, balanced, hygienic and high quality in accordance with the expectations of today's people.
Skills (Describe as Cognitive and/or Practical Skills.)
  1) Will be able to make menu and menu planning.
  2) Will be able to calculate the menu cost and sales price.
  3) Will be able to define the relationship between business and menu.
  4) Can plan healthy menu for restaurants and calculate calories.
