SECTION II: INTRODUCTION TO THE COURSE

Course Objectives & Content

Course Objectives: This course aims to explain and apply basic bread making techniques and leavening processes.
Course Content: The content of this course consists of dough preparation procedure, yeast production, fermentation knowledge, cooking, cutting and presentation techniques.

Course Specific Rules

As the Course Requirements, students are expected to attend classes, actively participate in class discussions and evaluations, complete applications within the given time, and check their e-mails daily through OIS.

  3) It can make leavened bread dough using plain dough or yeast dough.
  4) Can apply the techniques of yeast production, portioning and forming of bread.
