SECTION II: INTRODUCTION TO THE COURSE

Course Objectives & Content

Course Objectives: By discussing the science of gastronomy together with its trends, it is to present students with well-known chefs and publishedbooks in this field.
Course Content: Definition of gastronomy, historical development, types, trends, menu concept, necessary basic information about the business and personnel (food safety, use of kitchen space, important sauces, important chefs, etc.).

Course Specific Rules

As the Course Requirements, students are expected to participate in classes, actively participate in class discussions and evaluations, complete their homework within the given time and check their e-mails daily through OIS.

Course Learning Outcomes (CLOs)

Course Learning Outcomes (CLOs) are those describing the knowledge, skills and competencies that students are expected to achieve upon successful completion of the course. In this context, Course Learning Outcomes defined for this course unit are as follows:
Knowledge (Described as Theoritical and/or Factual Knowledge.)
  1) Evaluates the history of food and distinguishes that the act of nutrition contains not only a biological necessity but cultural meanings.
  2) Will be able to distinguish the concept of gastronomy and its relationship with other sciences.
  3) Will be able to define kitchen structure and kitchen organization.
  4) It will evaluate the stages human beings have gone through in the process of finding and producing food from prehistoric times to the period when the first civilizations emerged.
  5) Will be able to explain basic facts about nutritional currents.
  6) Will be able to define national and international cuisines and apply and develop basic cooking techniques within this framework.
Skills (Describe as Cognitive and/or Practical Skills.)
  1) Will be able to analyze the culinary history and interpret today's cuisine.
  2) Will be able to interpret the relationship between kitchen and human.
